BREAKFAST IDEAS
GRANOLA
4 cups jumbo oats 1 cup porridge oats
1 cut whole meal flour 1 cup coconut
¼ cup hazel nuts or almonds ½ cup olive oil
½ cup apple juice concentrate ½ cup water
or 1 tsp honey
Few drops vanilla essence
Mix together well all the dry ingredients, then the wet ingredients then mix both together. Spread out on two large baking trays and bake on a low heat gas mark 1 or 250°F in the oven for 3 to 4 hours until thoroughly dried out. Stir and turn the granola every half hour or so to prevent it burning. Allow to cool and then add some sunflower seeds and raisins. Very nice for breakfast served with Soya milk or rice milk plus some chopped fresh fruit.
BANANA CAKES
3 Bananas, mashed
1 cup chopped dates
1 cup raisins
1/2 cup sunflower seeds
½ cup desiccated coconut
Few drops vanilla essence
Mix well all the above ingredients. Then add 2 cups rolled oats and mix in well. Mould into round cakes and place on a lightly oiled baking tray. Cover with greaseproof paper and bake in a preheated oven medium heat for 25 minutes.
MAIZE MEAL PORRIDGE
1 cup maze meal 2 cups Soya milk
2 ½ cups water ½ cup desiccated coconut
1 cup dates
Simmer maze meal in water for 20 minutes; add Soya milk and more water as necessary so that it does not get too thick. After about the first 10 minutes add coconut and dates. Serve piping
Hot in bowls for breakfast.

MILLET AND RAISINS
1 cup millet 4 cups water
1 cup Soya milk 1 cup raisins
Simmer millet in water for 45 minutes or cook in pressure cooker for 10 minutes at high pressure and reduce pressure slowly. When millet is cooked, add Soya milk and raisins. Simmer for 5 more minutes; stir occasionally to prevent sticking. Then serve.
Alternatively you can cook the millet in a slow cooker over night then you would need 1 cup millet to 6 cups boiling water, put the raisings in and cook over night. Add milk in the morning before serving or top with cashew cream when served. Variations on this - try short grain brown rice or whole barley instead of millet. Try adding apricots, dates, sultanas or other dried fruit.
